Well, you guys, it is way past time for me to post another Instant Pot recipe! What better way to kick off comfort food season with a quick and easy beef stew? This tastes so amazing like it's been simmering away for hours, but it really takes less than an hour and most of the foot work is done by our magical friend, the Instant Pot!
The last time we talked Instant Pot here, we talked about how I was liking it, and my first experiences. Well, I LOVE it and I'm completely addicted to the thing! I have a feeling it will be getting regular use year round because it's almost always the fastest way to get dinner on the table, and it will keep me from having to heat up my oven once that scorching summer heat comes back!

So, this beef stew recipe makes exactly enough to serve four people. Sometimes I can give or take a little on serving size, but this came out just right for four.
The good news is, there was plenty of room in my Instant Pot should I have wanted to double this recipe! It's so tasty, and I think everyone likes stew so I'd gladly double this and serve it to company! Another win with stew is that it's relatively cheap to make.
TIPS FOR SUCCESS WITH INSTANT POT BEEF STEW:
- Sear the meat first as directed in the recipe! Taking the quick stepto sear the meat instead of just tossing everything it produces a much more flavorful stew.
- Natural release for the best results. It's best to always natural release anyway when you have really hot boiling liquids like this. I also prefer the natural method for the best texture in the meat.
- Don't let this cool before adding the cornstarch/water. You want to add the cornstarch and cold water mixture while the stew is still nice and piping hot for the best thickening. If you like your stew extra thick, you can double the cornstarch mixture.

Instant Pot Beef Stew
Ingredients
- 1 ½ Pounds Beef Stew Meat
- 1 Tablespoon Olive Oil
- 1 Teaspoon Salt
- 1 Teaspoon Pepper
- 1 Teaspoon Italian Seasoning
- 2 Tablespoons Worcestershire Sauce
- 3 Cloves Garlic, Minced
- 1 Large Onion, Chopped
- 1 16 Ounce Bag Baby Carrots, Cut Into Slices
- 1 Pound Potatoes, Cubed
- 2 ½ Cups Beef Broth
- 1 10 Ounce Can Tomato Sauce
- 2 Tablespoons Cornstarch
- 2 Tablespoons Water
Instructions
- Add the olive oil to the instant pot and turn on the saute function. When the oil starts to sizzle add the meat and season with the salt, pepper, and Italian seasoning.
- Cook the meat until Browned on all sides.
- Add the beef broth to the instant pot and use a spoon to scrape the brown bits from the bottom of the pan.
- Add the Worcestershire sauce, garlic, onion, carrots, potatoes, and tomato sauce.
- Close the lid and steam valve on the instant pot.
- Cook on high pressure for 35 minutes, then allow the pressure to release naturally for 10 minutes before doing a quick release.
- Mix together the cornstarch and cold water in a small bowl and stir into the stew until thickened.

I didn't have the exact ingredients. Used tomato paste instead of sauce, and beef bouillon paste instead of broth. Added a cup of red wine, some celery and fresh rosemary.
It's perfect, and the whole house smells good!
My partner and I have already had seconds and may have thirds before bed! Lol

Easy recipe with all our favorite ingredients! The meat was tender. The only comment would be to make the potatoes bigger cubes- they overcooked a bit.
This was delicious and easy to make. I didn't have worcesteshire sauce so I used soy sauce. I also added 1/2 cup of red wine since I was having some with dinner anyways. I will definitely make this again. I ate two giant bowls of it the first night.

So excited to try this tonight! I was wondering if anyone has used sweet potatoes as a substitute, I have some I need to use up. Would you want to cut them up or peel send leave whole?
I always add one sweet potato to my beef stew along with the regular potatoes. I peel it and cube it same as the regular potatoes but the sweet potato does soften/dissolve more once cooked. I'm ok with it because it naturally thickens the stew a bit and sweetens the flavor just a touch. Hope that helps.
Easy to make and delicious! I added in a bit of celery since I had some to use up.
My only issue has been with the tomato sauce. No matter what brand or even homemade, it’s got an oily residue that I don’t know how to get rid of!
I've made this twice. Excellent results! The second time I was low on bullion so I used a cup of chianti. Delicious!
Try a teaspoon or so of sugar
I use stewed tomatoes instead of sauce.
I used diced tomatoes and just blended them up with a bit of seasoning and sugar.
I actually did not have tomato sauce on hand, but I did have a can of sloppy joe sauce. Worked fantastic and added a depth of additional flavor. Hubby and kiddos loved it! The only oil I had to deal with was from the fat on the stew meat, but that can be drained after browning the beef if you prefer it that way. Will be repeating this recipe!
This is the best beef stew I’ve ever made. When I ask my husband what he would like for dinner he asks for this beef stew more than any other thing for dinner. I’ve made this four times and I’ve not found this recipe that long ago. It is a quick and easy recipe. I’m am learning to use my instant pot, actually I’ve had it over 2 years now and I’m finally getting comfortable with it. I serve this with French bread and my husband likes to dip it into the stew. I double the corn starch and water as we like the stew to be on the thicker side. This has a wonderful flavor. Thank you so much for this delicious recipe.

Idk about yhis recipe... in general I.P. recipes have the same cooking time for various amounts.
I love this recipe and I have made it multiple times. I omit the Italian seasonings. I'm curious how large the servings are if this is 4 servings. It seems to be much more than 4 cups of stew. I think the servings must be more than a cup. Trying to count my WW points. 🙂

The root vegetables are soft but still hold some texture in the pressure cooker. I also added a chopped turnip to the pot . Next up, Butternut Squash Lasagne Soup!

This sounds really good but after this long in the pressure cooker don't the potatoes turn to mush?
When I did this I cooked it 20 minutes then did a natural release and added carrots, potatoes and peas then cooked 10 more minutes to keep the veggies firmer. It worked great.
Exactly that I do. If not the root vegetables become almost puree!
I expected that to happen, but it didn't. I used small Golden potatoes and didn't cut them.
I used small white potatoes and they held up quite well. I did not cut them up or peel them. Just washed and scrubbed them.
I made this today for my family. What can I say...absolutely delicious and easy! I doubled the recipe and processed for the same amount of time. It’s a keeper! This could easily be adjusted to your own taste ?

I just made it with chuck roast. Cooked perfect at 32 minutes for me.
