I made a half batch (with half ingredients) but found the noodles too al dente for my liking so I would just add more broth and maybe 1-2 mins extra time. I added broth after the quick release and popped it back on saute with the lid on for 3 mins and it fixed it. 🙂

I tried to make it with half, but with a 3L instant pot instead. It took ages to pressurise and then as soon as the timer came on, I got the dreaded “food burn” message! I checked and sure enough all the liquid was gone and there were some burnt bits at the bottom. Strangely, the macaroni was already quite cooked so I just continued with the recipe. Next time I’ll add a bit more water for half the recipe I think.

I understand if the water was too little and macaroni became undercooked, but why was there so much liquid left? I ended up using the sauté mode and that made the macaroni really mushy 🙁 What did I do wrong??

Just tried this recipe tonight, but subbed cayenne and mustard powder for the hot sauce since the only hot sauce I like isn't one my family likes (Chipotle Tabasco). My cheeses were 2 parts X-Sharp Tillamook, 1 part Co-Jack, and a little bit of orange-rind muenster. I "accidentally" over-cheesed it, so I had to use extra milk - which worked quite well, honestly, except perhaps it would be too rich for some people with all the extra cheese.

I know it was successful, because my wife, who dislikes mac and cheese, wanted some after taking a bite of mine. It's amazing how much difference the muenster made, for how little of it I used. It took the mac and cheese from great to drool-worthy, in my daughter's and my opinions.

This recipe is now, thanks to you, in my repertoire for quick meals.

I’m sure this recipe is great - I made the mistake of using Better Than Bullion paste at full strength (1 tsp per 8 oz. of water), and it tasted like concentrated chicken noodle soup! Don’t make my mistake. If you use Better Than Boullion, use the low sodium version, or only use 1/2 tsp per 8 oz. of water.
